Ingredients

6 boneless, skinless chicken thighs

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

¼ teaspoon dried thyme

¼ teaspoon dried rosemary (optional)

Fresh parsley for garnish (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with a paper towel to ensure they crisp up when baked.
  3. In a small bowl, mix together garlic powder, onion powder, paprika, salt, pepper, thyme, and rosemary.
  4. Drizzle olive oil over the chicken thighs and rub it in to coat the meat evenly.
  5. Sprinkle the seasoning mix over both sides of each chicken thigh, ensuring they’re evenly coated.
  6. Arrange the seasoned chicken thighs on a baking sheet lined with parchment paper or in a lightly greased baking dish.
  7. Bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) when checked with a meat thermometer.
  8. Once baked, remove from the oven and let the chicken rest for 5 minutes.
  9. Garnish with fresh parsley and serve.

Notes

  1. For extra heat, add red pepper flakes or cayenne pepper to the seasoning mix.
  2. For a zesty twist, add lemon zest and lemon juice to the seasoning.
  3. If you like garlic parmesan, sprinkle grated Parmesan cheese on the chicken after baking and return it to the oven for 2-3 minutes.
  4. If using bone-in chicken thighs, they will take 40-45 minutes to cook.
