Vegan Chocolate Coconut Mousse
- 14 ounces can full-fat coconut milk (refrigerated for at least 4 hours)
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 3 tablespoons cocoa powder
- ¼ cup chocolate shavings from a vegan chocolate bar
Instructions
- Prepare Coconut Cream: Carefully open the refrigerated can of coconut milk and gently scoop out only the thick cream layer that has separated and risen to the top, leaving the liquid behind.
- Combine Ingredients: Transfer the coconut cream to a large mixing bowl or the bowl of a stand mixer fitted with a whisk attachment.
- Whip Mixture: Add powdered sugar and vanilla extract to the coconut cream. Use a hand mixer or stand mixer on high speed to whip until thick and creamy, about 2-3 minutes. Reserve 4 tablespoons of this whipped cream to use later as a topping.
- Add Cocoa Powder: Sift the cocoa powder using a mesh strainer over the whipped mixture to prevent clumps. Beat with an electric mixer for about 1 minute until fully incorporated and smooth.
- Serve and Garnish: Spoon the mousse into small bowls. Top each with the reserved whipped coconut cream and sprinkle with vegan chocolate shavings. Optionally garnish with fresh berries for added freshness and color.
