Ingredients

Wet Ingredients

  • 150 ml whole milk
  • 1 tbsp lemon juice
  • 40 g olive oil
  • 1 medium free range egg

Dry Ingredients

  • 60 g plain white flour
  • 125 g wholemeal plain flour
  • 2 tsp baking powder
  • Pinch of salt and pepper

Fillings

  • 100 g mature cheddar cheese (grated)
  • 1 salad tomato (deseeded and diced)
  • 4 streaky smoked bacon rashers (cooked until crispy)
  • 1/4 red onion (finely diced)


Instructions

  1. Prepare muffin tins: Grease or spray your muffin tins with oil to prevent sticking.
  2. Make buttermilk: In a bowl, whisk together the milk and lemon juice and let it sit for 5 minutes to curdle slightly, creating a buttermilk substitute.
  3. Mix wet ingredients: Add the olive oil and egg into the milk mixture and whisk thoroughly until well combined.
  4. Combine dry ingredients: Sift the plain white flour, wholemeal flour, baking powder, and a pinch of salt and pepper directly into the bowl. If there’s any bran left in the sieve, add that in too. Mix everything together gently.
  5. Add fillings: Stir in the grated mature cheddar cheese, diced tomato, crispy bacon pieces, and finely diced red onion until evenly distributed in the batter.
  6. Fill muffin trays: Divide the batter equally between two 4-hole muffin trays. Fill each hole generously as the muffins will rise without spreading.
  7. Preheat air fryer: Preheat your air fryer, typically for about 4 minutes at 205°C, or follow your manufacturer’s instructions.
  8. Cook muffins: Place the first muffin tray in the air fryer basket. Set the temperature to 170°C and cook the muffins for 20 minutes until they have risen beautifully and are golden on top.
  9. Cool and serve: Remove the muffin tray from the air fryer and let the muffins cool for a few minutes in the tray on a wire rack. Then gently remove the muffins and place them directly on the wire rack to cool further. Enjoy warm or cold.
