Description

Air Fryer Cheesy Mashed Potato Balls are a crispy and cheesy snack made from leftover mashed potatoes. They offer a golden exterior with a creamy, cheesy center, making them the perfect comfort food.

Ingredients

2 cups mashed potatoes (preferably cold or leftover)

1 cup shredded cheddar cheese

1/2 cup panko breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup green onions, chopped

1 egg, beaten

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon pepper

Olive oil spray (for greasing)

Instructions

  1. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper.
  2. Mix everything together until well combined.
  3. Scoop out a tablespoon of the mashed potato mixture and roll it into a ball.
  4. Dip each ball into the beaten egg, then coat it with panko breadcrumbs.
  5. Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  6. Lightly spray the air fryer basket with olive oil to prevent sticking.
  7. Place the mashed potato balls into the air fryer basket, ensuring they are not touching each other.
  8. Air fry the balls for 10-12 minutes, or until they are golden brown and crispy on the outside.
  9. Serve immediately with your favorite dipping sauce.

Notes

  1. For added flavor, you can include crumbled bacon, different cheeses, or fresh herbs.
  2. If you want to make them spicy, add chopped jalapeños or cayenne pepper.
  3. These balls can be made ahead and stored in the refrigerator or frozen for later use.
  4. For a vegan version, use dairy-free mashed potatoes, vegan cheese, and flaxseed egg replacement.
  5. To reheat, air fry at 350°F (175°C) for 5-7 minutes.
