Ingredients
2 cups mashed potatoes (preferably cold or leftover)
1 cup shredded cheddar cheese
1/2 cup panko breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup green onions, chopped
1 egg, beaten
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
Olive oil spray (for greasing)
Instructions
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and pepper.
- Mix everything together until well combined.
- Scoop out a tablespoon of the mashed potato mixture and roll it into a ball.
- Dip each ball into the beaten egg, then coat it with panko breadcrumbs.
- Preheat your air fryer to 375°F (190°C) for about 5 minutes.
- Lightly spray the air fryer basket with olive oil to prevent sticking.
- Place the mashed potato balls into the air fryer basket, ensuring they are not touching each other.
- Air fry the balls for 10-12 minutes, or until they are golden brown and crispy on the outside.
- Serve immediately with your favorite dipping sauce.
