Instructions

  1. Prepare the buttermilk substitute: In a mixing jug, combine the soy milk, apple cider vinegar, and vanilla extract. Stir well and leave the mixture to rest for 5 minutes to thicken and curdle, mimicking buttermilk.
  2. Sift dry ingredients: Sift the plain flour, caster sugar, baking powder, and salt into a large mixing bowl to ensure even distribution and remove lumps.
  3. Combine wet and dry mixtures: Pour the rested buttermilk substitute into the dry ingredients and whisk thoroughly until the batter is smooth and free of lumps. Let the batter rest for 30 minutes to allow the baking powder to activate and the batter to thicken slightly.
  4. Prepare the cake tin: Grease an 8-inch (20 cm) round cake tin with vegetable oil or butter to prevent sticking.
  5. Cook the pancakes: Pour approximately one quarter of the batter into the greased cake tin to form one large pancake. Place the tin inside the air fryer and cook at 350°F (180°C) for 8 minutes or until the pancake is lightly golden on top and cooked through in the center.
