Description

Ingredients

4 cups sliced cucumbers

1 medium onion, thinly sliced

1 cup white vinegar

1/2 cup water

3/4 cup sugar

1 tablespoon kosher salt

1 teaspoon mustard seeds

1 teaspoon dill seeds

1/2 teaspoon crushed red pepper flakes (optional)

1 garlic clove, smashed


Instructions

  1. Slice the cucumbers and onion, then place them in a large bowl or jar.
  2. In a small saucepan, combine vinegar, water, sugar, salt, mustard seeds, dill seeds, and red pepper flakes (if using). Bring to a boil, stirring occasionally to dissolve sugar and salt.
  3. Once boiling and sugar has dissolved, remove from heat and add smashed garlic clove to the hot liquid.
  4. Pour the hot mixture over cucumbers and onions, making sure they are fully submerged.
  5. Allow the mixture to cool to room temperature before covering and refrigerating.
  6. Let the pickles sit in the refrigerator for at least 24 hours before enjoying, though they get more flavorful with time.
