Description
Amish Refrigerator Pickles are a quick and easy recipe that offers a tangy, sweet, and crunchy pickle experience, perfect for those who want to enjoy homemade pickles without canning.
Ingredients
4 cups sliced cucumbers
1 medium onion, thinly sliced
1 cup white vinegar
1/2 cup water
3/4 cup sugar
1 tablespoon kosher salt
1 teaspoon mustard seeds
1 teaspoon dill seeds
1/2 teaspoon crushed red pepper flakes (optional)
1 garlic clove, smashed
Instructions
- Slice the cucumbers and onion, then place them in a large bowl or jar.
- In a small saucepan, combine vinegar, water, sugar, salt, mustard seeds, dill seeds, and red pepper flakes (if using). Bring to a boil, stirring occasionally to dissolve sugar and salt.
- Once boiling and sugar has dissolved, remove from heat and add smashed garlic clove to the hot liquid.
- Pour the hot mixture over cucumbers and onions, making sure they are fully submerged.
- Allow the mixture to cool to room temperature before covering and refrigerating.
- Let the pickles sit in the refrigerator for at least 24 hours before enjoying, though they get more flavorful with time.
Notes
- These pickles are best enjoyed after 3-5 days in the refrigerator for maximum flavor.
- For spicy pickles, add extra crushed red pepper flakes or a sliced jalapeƱo.
- If you prefer sweeter pickles, increase the sugar amount to 1 cup.
- Experiment with different vinegars like apple cider vinegar for a unique twist.
- Store the pickles in an airtight jar in the refrigerator for up to 3-4 weeks.
