Ingredients

Dough

  • 1 3/4 cup (414 mL) whole milk, warmed to 110-115°F (41-46°C)
  • 2 ¼ tsp (1 pkg) active dry yeast
  • ¼ cup (5 g) granulated sugar
  • 2 tbsp (30 mL) pure maple syrup
  • 3 large eggs
  • 5 cups + 1 tbsp (633 g) all-purpose flour, plus more for dusting
  • 2 sticks (1 cup; 16 tbsp) unsalted butter, softened and cut into cubes
  • 1 tsp vanilla extract
  • ¼ tsp ground cloves
  • ½ tsp ground ginger
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg

Apple Filling

  • 5 medium Gala apples, peeled and diced
  • ½ cup (110 g) light brown sugar
  • 1 tbsp (8 g) cornstarch
  • ½ stick unsalted butter
  • 1 tsp (5 mL) vanilla extract

Frying

  • 1 ½ quarts vegetable oil

Maple Glaze

  • 4 ½ cups (540 g) powdered sugar
  • ¼ cup (59 mL) pure maple syrup
  • ½ cup (118 mL) milk


Instructions

  1. Dough Preparation: In the bowl of a stand mixer fitted with a dough hook, whisk together warmed milk, active dry yeast, granulated sugar, and maple syrup. Let this mixture proof for 10 minutes until foamy.
  2. Mixing Dough: Lightly beat the eggs and add them to the mixer bowl along with all the flour. Start mixing on the lowest speed to combine ingredients.
  3. Incorporate Butter: Add 12 tablespoons (1 ½ sticks) of softened butter in cubes to the bowl while stirring continues. First, beat the dough slowly for 1-2 minutes to incorporate the butter thoroughly, then increase the mixer speed to medium-high and knead the dough for 6 minutes total, scraping down the bowl sides after 3 minutes.
  4. First Rise: The dough will be sticky after kneading. Scrape the dough hook and bowl sides, cover with plastic wrap, and let the dough rise in a warm place for about 1 hour or until it doubles in size.
  5. Make Apple Filling: While the dough rises, peel and dice the apples into bite-sized pieces. Melt ½ stick of butter in a large skillet over medium heat until browned and nutty. Add cinnamon, ginger, nutmeg, and cloves, stirring until foamy. Toss in apples and coat with spices, then add brown sugar. Cook for about 5 minutes until apples soften. Stir in cornstarch and cook for 1 more minute to thicken the mixture. Spread out thinly to cool completely.
  6. Shape Dough with Filling: Generously flour the work surface, transfer the risen dough onto it, and roll into a rectangle. Evenly spread the cooled apple filling over the dough rectangle.
  7. Fold Dough: Fold the dough into thirds like a letter, first one side into the middle, then the other side over it, enclosing the filling.
  8. Second Rise: Shape the folded dough into a ball, place it back into the bowl, cover, and let rise again in a warm spot for at least 1 hour or until doubled.
  9. Roll and Cut Dough: Re-flour the surface and rolling pin, roll the dough out to 1-inch thickness. Using a biscuit cutter, cut rounds and place them on a floured baking sheet. Re-roll scraps to cut additional rounds. Slightly stretch the donuts if they puff up too much.
  10. Heat Oil: Heat vegetable oil in a deep fryer or heavy pot to 360°F (187°C).
  11. Fry Donuts: Fry the apple fritters in batches for 1.5-2 minutes on one side, then flip with chopsticks and fry for another 1.5 minutes until golden brown. Remove and drain on a wire rack set over a baking sheet.
