Description
Apple Pie Pops are handheld mini pies-on-a-stick filled with cinnamon-spiced apple filling and wrapped in golden, flaky crust. Perfect for parties, holidays, or a fun fall baking project.
Ingredients
- 2 medium apples, peeled, cored, and finely diced (Granny Smith or Honeycrisp recommended)
- 2 tbsp granulated sugar
- 2 tbsp brown sugar
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 1 tsp lemon juice
- 1 tsp cornstarch or flour
- 1 package (2 sheets) store-bought pie dough (or homemade)
- 1 egg, beaten (for egg wash)
- 12 lollipop sticks or popsicle sticks
- Optional: coarse sugar or cinnamon sugar for topping
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small saucepan, combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
- Cook over medium heat for 5–7 minutes until apples are soft and mixture is thick. Let cool completely.
- Roll out pie dough and use a 2.5-inch round cookie cutter to cut out circles.
- Place half the dough circles on the baking sheet and gently press a stick into the center of each.
- Spoon a small amount of apple filling onto each circle, leaving space around the edge.
- Top with another dough circle and press edges with a fork to seal.
- Brush tops with beaten egg and sprinkle with coarse sugar or cinnamon sugar, if desired.
- Bake for 15–18 minutes until golden brown.
- Cool for 10 minutes before serving. Serve warm or at room temperature.
Notes
- Let filling cool before assembling to prevent soggy crust.
- Use water or egg wash to help seal edges if needed.
- For a richer flavor, add a small dollop of caramel to the filling.
- These freeze well—reheat from frozen in the oven.
- Kids can help assemble and decorate for a fun activity.
