Description

Apple Pie Pops are handheld mini pies-on-a-stick filled with cinnamon-spiced apple filling and wrapped in golden, flaky crust. Perfect for parties, holidays, or a fun fall baking project.


Ingredients

  • 2 medium apples, peeled, cored, and finely diced (Granny Smith or Honeycrisp recommended)
  • 2 tbsp granulated sugar
  • 2 tbsp brown sugar
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tsp lemon juice
  • 1 tsp cornstarch or flour
  • 1 package (2 sheets) store-bought pie dough (or homemade)
  • 1 egg, beaten (for egg wash)
  • 12 lollipop sticks or popsicle sticks
  • Optional: coarse sugar or cinnamon sugar for topping


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small saucepan, combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
  3. Cook over medium heat for 5–7 minutes until apples are soft and mixture is thick. Let cool completely.
  4. Roll out pie dough and use a 2.5-inch round cookie cutter to cut out circles.
  5. Place half the dough circles on the baking sheet and gently press a stick into the center of each.
  6. Spoon a small amount of apple filling onto each circle, leaving space around the edge.
  7. Top with another dough circle and press edges with a fork to seal.
  8. Brush tops with beaten egg and sprinkle with coarse sugar or cinnamon sugar, if desired.
  9. Bake for 15–18 minutes until golden brown.
  10. Cool for 10 minutes before serving. Serve warm or at room temperature.

Notes

  • Let filling cool before assembling to prevent soggy crust.
  • Use water or egg wash to help seal edges if needed.
  • For a richer flavor, add a small dollop of caramel to the filling.
  • These freeze well—reheat from frozen in the oven.
  • Kids can help assemble and decorate for a fun activity.
