Description

These Banana Baked Donuts are a wholesome and delicious treat combining ripe bananas, warm cinnamon, and a light peanut butter honey glaze. Perfectly baked for a soft, tender texture, these donuts are made with a blend of all-purpose and whole wheat flours for added nutrition. Ideal for breakfast or an afternoon snack, they offer a sweet, guilt-free indulgence.

Ingredients

Donut Batter

  • 3 tablespoons unsalted butter (melted & cooled)
  • ½ cup light brown sugar (packed)
  • 1 large egg (room temperature)
  • ½ teaspoon vanilla extract
  • ¾-1 cup brown bananas (about 2 medium bananas, mashed)
  • ½ cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 teaspoon baking powder
  • ¾ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup mini chocolate chips or chopped walnuts (optional)

Peanut Butter Honey Glaze

  • 1¼ cups powdered sugar
  • 1 tablespoon creamy peanut butter
  • 1 teaspoon honey
  • 2 tablespoons milk

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C) and grease a donut pan thoroughly to prevent sticking.
  2. Mix dry ingredients: In a bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, ground cinnamon, and salt until evenly combined.
  3. Combine wet ingredients: In a separate bowl, mix the melted and cooled unsalted butter with the packed light brown sugar until fully incorporated. Then, add the room temperature egg and vanilla extract, mixing well. Finally, fold in the mashed ripe bananas until the mixture is smooth.
  4. Combine dry and wet mixtures: Gradually whisk the dry ingredients into the wet ingredients, mixing gently until no streaks of flour remain. If adding mix-ins like mini chocolate chips or walnuts, carefully fold them into the batter now.
  5. Fill donut pan: Transfer the batter into a piping bag or a gallon-sized disposable bag with the tip cut to about 1 inch wide. Pipe the batter into the greased donut molds, filling each evenly—aim for 6 donuts total. Alternatively, you can spoon the batter carefully into each mold.
  6. Bake the donuts: If using a flexible or silicone donut pan, place it on a sturdy baking sheet for stability. Bake in the preheated oven for 16-20 minutes, until the donuts turn lightly tan and are firm to the touch. Press gently on a donut; it should spring back without leaving an imprint.
  7. Cool the donuts: Let the donuts cool in the pan for about 20 minutes to set. Then, carefully remove them onto a cooling rack to cool completely before glazing.
  8. Prepare the glaze: In a bowl, whisk together the powdered sugar, creamy peanut butter, honey, and milk until you achieve a smooth, pourable consistency.
  9. Glaze the donuts: Dip the cooled donuts into the peanut butter honey glaze or drizzle the glaze evenly over the tops. Allow the glaze to set slightly before serving.

Notes

  • Ensure bananas are very ripe for best flavor and natural sweetness.
  • If you prefer nut-free, omit the peanut butter and honey glaze or substitute with a simple powdered sugar glaze.
  • Donuts can be stored in an airtight container at room temperature for up to 2 days or refrigerated for up to 4 days.
  • Feel free to substitute milk with any plant-based milk to make the glaze dairy-free.
  • Optional mix-ins like chocolate chips or walnuts enhance texture but are not necessary.
