Ingredients
Blondies
- ½ cup butter (melted)
- 1 cup brown sugar (packed)
- 2 teaspoons vanilla extract
- 1 large egg
- ½ cup bananas (mashed, about 1 large banana)
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 1 cup all purpose flour
Cream Cheese Frosting
- 2 ounces cream cheese (softened)
- 2 tablespoons butter (softened)
- ¾ cup powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Preheat: Preheat the oven to 350°F (175°C). Spray an 8×8-inch baking pan with non-stick spray and set aside to prepare for the batter.
- Mix Wet Ingredients: In a medium bowl, combine the melted butter, packed brown sugar, vanilla extract, and the large egg. Stir by hand until the mixture is thick and all ingredients are well incorporated.
- Add Dry Ingredients and Banana: Add the cinnamon, salt, all-purpose flour, and mashed banana to the butter and sugar mixture. Stir by hand gently until just combined. Avoid overmixing to keep the blondies tender. Pour the batter evenly into the prepared baking pan.
- Bake Blondies: Place the pan in the preheated oven and bake for 18-22 minutes, or until the edges are slightly browned and the center is set but still looks a bit undercooked. This ensures moist blondies. Remove from oven and allow to cool completely in the pan.
- Prepare Frosting: Once the blondies are cooled, in a separate bowl combine softened cream cheese, softened butter, powdered sugar, and vanilla extract. Using a handheld mixer, beat until smooth and creamy. The frosting may be thick at first but will loosen up as you continue mixing.
- Frost Blondies: Spread the cream cheese frosting evenly over the cooled blondies with a spatula or knife, creating a smooth layer over the top.
- Serve and Store: Cut the frosted blondies into squares and serve. Store leftovers covered at room temperature for up to 4 days or refrigerate covered for up to 5 days to maintain freshness.
Notes
- For best results, use a ripe banana to maximize sweetness and moisture.
- Do not overbake to keep the blondies fudgy and soft.
- You can substitute all-purpose flour with a gluten-free blend if needed.
- Ensure cream cheese and butter are softened for smooth frosting consistency.
- Keep blondies covered to prevent drying out.
