Featuring a tender crumb enriched with buttermilk and cinnamon, it’s topped with a luscious cream cheese frosting that balances sweetness and tanginess beautifully. Ideal for birthdays, gatherings, or a delightful dessert any day.

Ingredients

Dry Ingredients

  • 3 cups (415 g) all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 1/3 cups (275 g) mashed bananas (about 3 ripe bananas)
  • 3/4 cup (170 g) salted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) brown sugar
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups buttermilk

Frosting

  • 1/2 cup salted butter, softened
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 3 1/2 cups confectioners sugar (powdered sugar)

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan to prevent sticking.
  2. Whisk Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt. Set aside for later use.
  3. Cream Wet Ingredients: In a large mixing bowl, cream the 3/4 cup softened butter with the granulated sugar and brown sugar for 4 to 5 minutes until the mixture is light and fluffy. Then, add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas until all are fully incorporated.
  4. Alternate Flour and Buttermilk: Gradually add the flour mixture and buttermilk to the wet ingredients, alternating between them. Start with half of the buttermilk, then half of the flour mixture, continuing this pattern until everything is combined. Mix until the batter is smooth but do not overmix.
  5. Bake: Pour the batter evenly into the prepared cake pan. Bake in the preheated oven for about 45 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Remove the cake from the oven and allow it to cool completely in the pan before frosting.
  7. Beat Frosting Ingredients: In a medium-sized bowl, cream together the softened butter and cream cheese until smooth. Add the vanilla extract.
  8. Make Frosting: Gradually beat in the confectioners sugar with a hand mixer, continuing to beat until the frosting is smooth and fluffy.
  9. Spread Frosting: Evenly spread the cream cheese frosting over the cooled cake. Slice into servings and enjoy!

Notes

  • If you prefer a sweeter cake, you can increase the granulated sugar to 1 1/4 cups.
  • Ensure the bananas are very ripe for maximum flavor and moisture.
  • Room temperature ingredients will help the batter mix evenly and produce a better texture.
  • The cake can be stored in the refrigerator for up to 4 days with frosting on.
  • For variations, add chopped walnuts or chocolate chips to the batter before baking.
