Description

Bang Bang Chicken Skewers are a perfect combination of savory, spicy, and sweet. Grilled chicken pieces are coated in a creamy, tangy, and spicy sauce, making each bite irresistible.

Ingredients

1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

1 tbsp olive oil

Salt and pepper to taste

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tbsp sriracha (adjust for spice preference)

1 tsp garlic powder

1 tsp rice vinegar

1 tsp sesame oil

1 tbsp chopped green onions (for garnish)

1 tbsp sesame seeds (optional for garnish)

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Thread the chicken pieces onto skewers, making sure not to overcrowd them.
  3. Drizzle olive oil over the skewers, then season with salt and pepper.
  4. Place the skewers on the grill and cook for about 4-5 minutes on each side or until the chicken is fully cooked through and has nice grill marks.
  5. While the chicken is grilling, make the Bang Bang sauce: In a bowl, mix the mayonnaise, sweet chili sauce, sriracha, garlic powder, rice vinegar, and sesame oil until smooth and well combined.
  6. Once the chicken is cooked, remove the skewers from the grill and brush them with the Bang Bang sauce.
  7. Garnish with chopped green onions and sesame seeds if desired.
  8. Serve immediately and enjoy!

Notes

  1. Vegetarian Option: Swap out the chicken for tofu or mushrooms for a plant-based alternative.
  2. Grilled Veggies: Add some vegetables like bell peppers or zucchini to the skewers for extra flavor and color.
  3. Spicy Heat: Adjust the level of sriracha in the sauce to make it as spicy as you like, or even add fresh chopped chilies to the chicken before grilling for an extra kick.
  4. Storage: Store leftovers in an airtight container in the refrigerator for up to 2 days.
  5. Reheating: Reheat in the microwave or on a grill/oven until warmed through.
