Description

BBQ Beef Biscuit Cups are a perfect fusion of comfort and flavor, with tender, savory beef mixed with tangy BBQ sauce, all nestled inside flaky, golden biscuit cups.

Ingredients

1 lb ground beef

1 small onion, finely chopped

1 cup BBQ sauce (your favorite varietAy)

1 can (8 oz) refrigerated biscuit dough

1 cup shredded cheddar cheese (optional)

Salt and pepper to taste

1 tbsp olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the ground beef and onion, cooking until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
  3. Stir in the BBQ sauce and season with salt and pepper. Simmer the mixture for about 2 minutes until well combined and heated through. Remove from heat.
  4. Roll out the biscuit dough and cut each biscuit into half. Press each half into the bottom of a greased muffin tin to form little cups.
  5. Spoon the BBQ beef mixture into each biscuit cup. Top with shredded cheddar cheese if desired.
  6. Bake in the preheated oven for 10-12 minutes, or until the biscuit cups are golden brown and the cheese is melted.
  7. Remove from the oven and let cool slightly before serving.

Notes

  1. Vegetarian Option: Replace the ground beef with a plant-based meat substitute, such as crumbled tofu or lentils, and use a vegetarian BBQ sauce for a meatless version.
  2. Cheese Variations: Swap the cheddar cheese for mozzarella, pepper jack, or even a blend of your favorite cheeses for a different flavor profile.
  3. Add Veggies: Include diced bell peppers, mushrooms, or corn in the BBQ beef mixture for extra flavor and texture.
  4. Spicy BBQ: Use a spicy BBQ sauce or add some chili flakes to the beef mixture for a kick of heat.
  5. Storage/Reheating: To store leftover BBQ Beef Biscuit Cups, place them in an airtight container and refrigerate for up to 3 days. To reheat, microwave for 20-30 seconds or place them in the oven at 350°F (175°C) for 5-7 minutes. Can be frozen for up to 3 months and reheated from frozen in the oven for 15-20 minutes.
