Description

Blackberry dumplings are a delicious dessert that combines the sweetness of ripe blackberries with tender dumplings, all simmered in a sugary syrup. A comforting and satisfying treat, perfect for any gathering.

Ingredients

4 cups fresh blackberries (or frozen)

1 cup water

3/4 cup sugar

1/4 teaspoon lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk

2 tablespoons unsalted butter, melted

1/2 teaspoon vanilla extract

Instructions

  1. In a large saucepan, combine the blackberries, water, sugar, lemon juice, and 1 teaspoon vanilla extract. Bring the mixture to a simmer over medium heat. Cook for about 5 minutes, stirring occasionally, until the berries start to release their juices and the syrup begins to thicken slightly.
  2. While the berries are cooking, make the dumpling dough. In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Add the milk, melted butter, and 1/2 teaspoon vanilla extract. Stir until just combined. The dough will be thick.
  3. Once the berry mixture is simmering, drop spoonfuls of the dumpling dough into the syrup. Cover the saucepan with a lid and reduce the heat to low. Let the dumplings cook for about 15-20 minutes, or until they are fluffy and fully cooked through. Avoid lifting the lid while the dumplings cook, as the steam is essential for their rise.
  4. Once cooked, remove the saucepan from the heat and let it sit for a few minutes before serving. Spoon the dumplings into bowls and ladle the blackberry syrup over them.

Notes

  1. Storage: Store any leftover blackberry dumplings in an airtight container in the refrigerator for up to 2-3 days. The dumplings may soften as they sit in the syrup, but they will still be delicious.
  2. Reheating: Reheat in the microwave for 30-45 seconds or on the stovetop over low heat. If reheating on the stove, add a little extra water to loosen the syrup if needed.
  3. Gluten-Free: Use a gluten-free all-purpose flour blend in place of regular flour to make the dumplings gluten-free.
  4. Vegan: Substitute the milk with a non-dairy alternative like almond or oat milk, and use dairy-free butter for a vegan-friendly version.
