These Blue Cheese Scones make a delightful savory treat perfect for breakfast or a snack. Flavored with tangy Stilton cheese and fresh thyme, these scones are fluffy, golden, and packed with rich cheese goodness. They bake quickly in the oven, resulting in a crispy outside and soft, buttery inside.

Dry Ingredients
- 420 g self-raising white flour (self rising flour) (plus some for dusting)
- 1 tsp baking powder
- ¼ tsp black pepper
Wet Ingredients & Others
- 100 g salted butter (cold and cubed)
- 2-3 sprigs thyme (leaves only)
- 150 g firm blue cheese (e.g. Stilton), divided
- 200 ml whole milk (plus a little extra for brushing the tops)
Instructions
- Preheat the Oven: Preheat your oven to 200°C (390°F) or 180°C (355°F) if using a fan-assisted oven to ensure it is hot enough for perfect scone rising.
- Prepare Baking Sheet: Lightly dust a baking sheet with flour to prevent the scones from sticking during baking.
- Mix Dry Ingredients: In a mixing bowl, sift together the self-raising flour, baking powder, and black pepper, combining them evenly.
- Incorporate Butter & Thyme: Using the tips of your fingers, rub the cold, cubed butter into the flour mixture until it resembles an even crumb. Add in the fresh thyme leaves and mix gently.
- Add Milk Gradually: Slowly pour in the whole milk while mixing with a flat knife. The dough will start to clump together; mix just enough to combine.
- Add Blue Cheese: Crumble about two-thirds (approximately 100g) of the blue cheese into the dough and incorporate it gently without overworking.
- Shape Dough: Turn the dough out onto a floured surface. Gather it lightly and shape into a disc approximately 15 cm (6 inches) wide, being careful not to over-handle the dough.
- Cut Scones: Cut the disc into eight equal triangular wedges using a sharp knife or bench scraper.
- Transfer to Baking Sheet: Place the scones onto the prepared, lightly floured baking sheet, spacing them evenly.
- Brush with Milk: Lightly brush the tops of the scones with a little of the reserved milk to help with browning.
- Add Remaining Blue Cheese: Crumble the remaining blue cheese over the tops of each scone for added flavor and texture.
- Bake: Bake in the preheated oven for 15-20 minutes until the scones have puffed up and turned a beautiful golden brown. Remove and let cool slightly before serving.
