Description

A light and refreshing dessert featuring lightly grilled angel food cake topped with a luscious mix of nonfat vanilla Greek yogurt, blueberry jelly, fresh blueberries, and a hint of lemon zest. Perfect for a quick summer treat or patriotic-themed celebrations.

Ingredients

Cake

  • 4 slices of angel food cake, 1 to 1 1/2 inch thick (about 1/3 of a whole cake)

Topping

  • 2/3 cup nonfat vanilla Greek yogurt
  • 1/4 cup blueberry jelly (preferably all-natural, fruit-sweetened such as Fiordifrutta)
  • 1 cup fresh blueberries (optional substitution or addition: strawberries and raspberries for a red-white-and-blue dessert)
  • 1 teaspoon lemon zest (from about half a lemon)

Instructions

  1. Prepare and preheat grill: Heat your grill and set it to a very low flame or turn off one side of the grill to avoid direct high heat. Place the angel food cake slices on the grill and toast each side lightly until golden and warm, about 2-5 minutes per side. Watch closely to prevent burning.
  2. Mix the sauce: While the cake is grilling, combine the nonfat vanilla Greek yogurt and blueberry jelly in a small bowl. Stir until smooth and well blended.
  3. Assemble and serve: Drizzle roughly 3 1/2 tablespoons of the yogurt and jelly sauce over each grilled angel food cake slice. Top each slice with about 1/4 cup of fresh blueberries (and additional berries if using) and sprinkle with 1/4 teaspoon lemon zest for a refreshing citrus finish.

Notes

  • Grilling the angel food cake adds a lovely toasted flavor, but be sure to use low heat to avoid burning the delicate cake.
  • For a colorful variation, add strawberries and raspberries to the fresh berries.
  • If a grill is unavailable, you can lightly toast the cake slices in a skillet over low heat or under a broiler, watching carefully.
  • Use all-natural, fruit-sweetened jelly to keep the dessert light and less processed.
  • This dessert is best served immediately while the cake is warm and the topping is fresh.
