Description

This Blueberry Strawberry Pie is a fresh and vibrant no-bake dessert that combines juicy strawberries and blueberries in a luscious, thickened filling set in a crisp pre-baked pie crust. Perfectly chilled and topped with whipped cream, this pie is an easy yet impressive treat for any occasion.

Ingredients

Filling

  • 4 cups strawberries (washed, hulled, and quartered)
  • 3 cups blueberries (washed)
  • 3 tablespoons cornstarch
  • 3/4 cup granulated sugar
  • 1/2 cup water
  • 2 teaspoons lemon juice
  • 1 cup strawberries (for puree)

Crust & Serving

  • 1 pre-baked pie crust
  • Whipped cream (to serve)

Instructions

  1. Make Strawberry Puree: Puree 1 cup of strawberries in a food processor until completely smooth to create a vibrant and flavorful base for the filling.
  2. Mix Cornstarch and Sugar: Whisk together cornstarch and granulated sugar in a medium saucepan to ensure even thickening.
  3. Cook Filling: Add the strawberry puree, water, and lemon juice to the saucepan and bring the mixture to a boil over medium heat, stirring continuously until thickened.
  4. Cool Filling: Remove the thickened strawberry mixture from heat and let it cool for 10 minutes to prevent cooking the fresh berries later.
  5. Combine Berries and Filling: In a large bowl, add the remaining quartered strawberries and blueberries. Pour the cooled strawberry filling over them and stir gently until all berries are evenly coated.
  6. Assemble Pie: Pour the berry mixture into the pre-baked pie crust, smoothing the top if needed, then refrigerate the pie for at least 3 hours to allow it to set completely.
  7. Serve: Once set, serve the pie chilled with a generous dollop of whipped cream for extra creaminess and flavor.

Notes

  • Ensure the pie crust is fully pre-baked to avoid sogginess since the filling is no-bake.
  • The cornstarch thickens the strawberry puree to create a stable filling that holds the fresh berries together.
  • You can substitute lemon juice with lime juice for a slightly different citrus flavor.
  • Leftover pie can be stored covered in the refrigerator for up to 3 days.
