Description

Ingredients

  1. 1 9-inch pie crust (store-bought or homemade)
  2. 6 large eggs
  3. 3/4 cup heavy cream or whole milk
  4. 1/2 teaspoon salt
  5. 1/4 teaspoon black pepper
  6. 1 cup shredded cheese (cheddar, Swiss, or blend)
  7. 1/2 cup cooked bacon, sausage, or ham (optional)
  8. 1/4 cup diced onions
  9. 1/4 cup chopped bell peppers
  10. 1/4 cup sliced mushrooms
  11. 1/2 cup chopped spinach
  12. 1 tablespoon olive oil or butter (for sautéing)

Instructions

Preheat oven to 375°F (190°C).

  1. Press pie crust into a 9-inch pie dish. Crimp the edges if desired.
  2. In a skillet over medium heat, sauté onions, mushrooms, and bell peppers in olive oil or butter until softened. Add spinach and cook until wilted. Let cool slightly.
  3. In a bowl, whisk together eggs, cream or milk, salt, and pepper.
  4. Sprinkle cheese evenly over the bottom of the crust.
  5. Spread sautéed vegetables and any cooked meat over the cheese.
  6. Pour egg mixture over the filling until the crust is nearly full.
  7. Bake for 35–45 minutes, or until the center is set and a knife inserted comes out clean.
  8. Let cool for 10 minutes before slicing and serving.

  • Par-bake crust for 8–10 minutes to avoid sogginess, especially if homemade.
