Description

This Brioche French Toast Casserole is a decadent and comforting dish perfect for brunch or breakfast gatherings. It features rich, buttery brioche soaked in a custardy mixture of eggs, milk, and cream, then topped with a sweet and crumbly cinnamon-brown sugar crisp. Baked to golden perfection, this casserole offers a delightful combination of creamy, custard-soaked bread and a crispy topping that will please both family and guests.

Ingredients

Brioche Base

  • 1 loaf (14-16 ounces) butter brioche or challah bread
  • 6 large eggs
  • 2 cups (50 cl) milk
  • 3/4 cup (20 cl) heavy cream
  • 1/2 cup (100 g) sugar (optional)
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Crisp Topping

  • 1/2 cup (90 g) packed brown sugar
  • 1/4 cup (30 g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 4 tablespoons (60 g) unsalted butter, diced

Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (180°C) and grease a 9 x 13-inch (23×30 cm) baking dish to prevent sticking.
  2. Prepare the brioche: Cut the brioche loaf into cubes or tear it into small pieces. Set aside.
  3. Mix custard base: In a medium bowl, whisk together the eggs, milk, heavy cream, sugar (if using), vanilla extract, and ground cinnamon until well combined.
  4. Combine bread and custard: Add the brioche pieces to the custard mixture and stir gently until all the bread is evenly coated.
  5. Soak bread: Let the mixture sit for about 10 minutes to allow the brioche to absorb the custard. Stir once again after soaking.
  6. Transfer to baking dish: Pour the soaked brioche mixture into the greased baking dish and spread evenly.
  7. Prepare crisp topping: In a small bowl, combine the brown sugar, all-purpose flour, and ground cinnamon. Add the diced butter and use your fingertips to rub the butter into the dry ingredients until the mixture resembles small crumbs.
  8. Top the casserole: Sprinkle the crumb mixture evenly over the brioche in the baking dish.
  9. Bake: Place the casserole in the preheated oven and bake for about 30 minutes, or until the top is golden brown and the custard is fully set. If the casserole jiggles significantly when you gently shake the pan, continue baking until it is fully cooked through.

Notes

  • Using butter brioche or challah bread enriches the flavor and texture; day-old bread can hold up better in the custard soak.
  • The sugar in the custard is optional depending on desired sweetness.
  • Make sure to let the custard soak into the bread for best texture.
  • Check for doneness by gently shaking the casserole; it should be set with no liquid custard moving.
  • This dish can be prepared the night before by assembling and refrigerating overnight before baking.
