Ingredients
Butter Mixture
- 2 ½ sticks unsalted butter
- 2 cups packed dark brown sugar
- 7 tablespoons honey
Wet Ingredients
- 2 eggs
- 2 egg yolks
Dry Ingredients
- 2 teaspoons salt
- 2 cups flour
Topping
- ½ cup shelled salted pistachios, roughly chopped
Instructions
- Preheat oven and prepare pan. Preheat your oven to 325 degrees Fahrenheit. Line a 9×13 inch baking pan with a parchment paper sling and lightly spray it with cooking spray to prevent sticking.
- Brown the butter. In a medium saucepan over medium-low heat, melt the unsalted butter completely. Continue cooking until the butter begins to brown and develops a nutty aroma. Be vigilant to prevent burning.
- Combine butter with sugars and honey. Transfer the browned butter to a large bowl. Whisk in the packed dark brown sugar and honey until you achieve a smooth mixture. Let the mixture cool slightly for about 5 minutes to prevent cooking the eggs in the next step.
- Add eggs and egg yolks. Whisk in the 2 whole eggs and 2 egg yolks into the cooled butter and sugar mixture until fully incorporated and smooth.
- Add flour and salt. Stir in the 2 cups of flour and 2 teaspoons of salt gently, being careful not to overmix to keep the bars tender.
- Pour batter and add pistachios. Pour the batter evenly into the prepared pan and sprinkle the roughly chopped salted pistachios evenly over the top.
- Bake the bars. Place the pan in the oven and bake for 22 to 25 minutes. The edges should be set, but the center should remain slightly soft and jiggle a little when moved.
- Cool the bars. Remove the bars from the oven and let them cool on the countertop on a wire rack for about 10 minutes. Use the parchment sling to lift the bars from the pan and transfer them onto a wire rack to cool completely.
- Cut and serve. Once fully cooled, cut the bars into small bite-sized squares and serve. Enjoy their chewy, nutty, caramel flavor with crunchy pistachio topping.
Notes
- Watching the butter carefully during browning is crucial to avoid burning and to achieve the rich nutty flavor.
- Be careful not to overmix the batter once flour is added to keep the bars tender and chewy.
- Using salted pistachios adds a nice contrast; unsalted pistachios can be used but consider adding a pinch of salt on top.
- Letting the bars cool completely before cutting ensures clean squares and proper texture.
- These bars store well in an airtight container at room temperature for up to 5 days.
