These Brown Butter and Honey Pistachio Bars are chewy and nutty with a rich, caramel-like flavor from browned butter and honey. Ingredients

Butter Mixture

  • 2 ½ sticks unsalted butter
  • 2 cups packed dark brown sugar
  • 7 tablespoons honey

Wet Ingredients

  • 2 eggs
  • 2 egg yolks

Dry Ingredients

  • 2 teaspoons salt
  • 2 cups flour

Topping

  • ½ cup shelled salted pistachios, roughly chopped


Instructions

  1. Preheat oven and prepare pan. Preheat your oven to 325 degrees Fahrenheit. Line a 9×13 inch baking pan with a parchment paper sling and lightly spray it with cooking spray to prevent sticking.
  2. Brown the butter. In a medium saucepan over medium-low heat, melt the unsalted butter completely. Continue cooking until the butter begins to brown and develops a nutty aroma. Be vigilant to prevent burning.
  3. Combine butter with sugars and honey. Transfer the browned butter to a large bowl. Whisk in the packed dark brown sugar and honey until you achieve a smooth mixture. Let the mixture cool slightly for about 5 minutes to prevent cooking the eggs in the next step.
  4. Add eggs and egg yolks. Whisk in the 2 whole eggs and 2 egg yolks into the cooled butter and sugar mixture until fully incorporated and smooth.

  6. Pour batter and add pistachios. Pour the batter evenly into the prepared pan and sprinkle the roughly chopped salted pistachios evenly over the top.
  7. Bake the bars. Place the pan in the oven and bake for 22 to 25 minutes. The edges should be set, but the center should remain slightly soft and jiggle a little when moved.
  8. Cool the bars. Remove the bars from the oven and let them cool on the countertop on a wire rack for about 10 minutes. Use the parchment sling to lift the bars from the pan and transfer them onto a wire rack to cool completely.
