Ingredients
Butter and Sugar
- ¾ cup unsalted butter
- 1 ½ cups coconut sugar or light brown sugar
Wet Ingredients
- 1 tsp vanilla extract
- 2 eggs
Dry Ingredients
- 1 ½ cups gluten free flour (see note)
- 1 tsp baking soda
- ½ tsp sea salt
Chocolate
- 1 cup mini dark chocolate chips
- ½ cup dark chocolate chips
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line an 8-inch square pan with parchment paper to prepare for baking the blondie batter.
- Brown the Butter: Place the butter in a skillet over medium heat. Stir continuously as the butter melts and cooks until it turns a golden brown color, releasing a nutty aroma. Immediately place an ice cube in the skillet to stop the cooking process and cool the browned butter.
- Mix Sugar and Butter: In a large mixing bowl, combine the coconut sugar or light brown sugar with the warm browned butter, including the flavorful browned bits scraped off the skillet. Stir thoroughly to blend.
- Add Vanilla and Eggs: Incorporate the vanilla extract and eggs into the sugar-butter mixture. Stir until the wet ingredients are fully combined and smooth.
- Add Dry Ingredients: Sift in or add the gluten free flour, baking soda, and sea salt to the wet mixture. Stir gently until just combined, being careful not to overmix.
- Fold in Chocolate Chips: Gently fold the mini dark chocolate chips and dark chocolate chips into the batter, distributing them evenly throughout.
- Transfer and Smooth Batter: Pour the batter into the prepared parchment-lined pan and smooth the top into an even layer. Optionally, sprinkle more chocolate chips on top for added chocolate.
- Bake: Bake the blondies in the preheated oven for 21 to 24 minutes. Check doneness by inserting a toothpick; it should come out mostly clean but still moist, indicating a gooey center.
- Cool and Serve: Remove the pan from the oven and allow the blondies to cool completely before slicing to ensure clean cuts and a perfect texture.
Notes
- You can substitute coconut sugar with light brown sugar if preferred.
- Ensure to use gluten free flour to keep the recipe gluten free.
- Allowing the blondies to cool fully prevents them from falling apart when sliced.
- If desired, adding extra chocolate chips on top enhances the chocolate flavor and appearance.
