Ingredients

Butter and Sugar

  • ¾ cup unsalted butter
  • 1 ½ cups coconut sugar or light brown sugar

Wet Ingredients

Dry Ingredients

  • 1 ½ cups gluten free flour (see note)

  • ½ tsp sea salt

Chocolate

  • 1 cup mini dark chocolate chips
  • ½ cup dark chocolate chips


Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit and line an 8-inch square pan with parchment paper to prepare for baking the blondie batter.
  2. Brown the Butter: Place the butter in a skillet over medium heat. Stir continuously as the butter melts and cooks until it turns a golden brown color, releasing a nutty aroma. Immediately place an ice cube in the skillet to stop the cooking process and cool the browned butter.
  3. Mix Sugar and Butter: In a large mixing bowl, combine the coconut sugar or light brown sugar with the warm browned butter, including the flavorful browned bits scraped off the skillet. Stir thoroughly to blend.
  4. Add Vanilla and Eggs: Incorporate the vanilla extract and eggs into the sugar-butter mixture. Stir until the wet ingredients are fully combined and smooth.
  5. Add Dry Ingredients: Sift in or add the gluten free flour, baking soda, and sea salt to the wet mixture. Stir gently until just combined, being careful not to overmix.
  6. Fold in Chocolate Chips: Gently fold the mini dark chocolate chips and dark chocolate chips into the batter, distributing them evenly throughout.
