Description
Brunswick Stew is a Southern classic made with slow-cooked meats, tender vegetables, and a smoky, tangy tomato-based broth. Traditionally featuring chicken and pork, it’s hearty, flavorful, and perfect for feeding a crowd.
Ingredients
- 2 cups shredded cooked chicken (smoked or rotisserie)
- 2 cups pulled pork or smoked pork shoulder
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups corn (fresh, frozen, or canned)
- 2 cups lima beans (or butter beans)
- 1 can (14 oz) diced tomatoes
- 1 can (8 oz) tomato sauce
- 1 cup barbecue sauce
- 4 cups chicken broth
- 1 tbsp Worcestershire sauce
- 1 tbsp apple cider vinegar
- 1 tbsp brown sugar
- Salt and black pepper, to taste
- Hot sauce (optional, to taste)
- 2 tbsp olive oil or butter
Instructions
- Heat olive oil in a large Dutch oven or soup pot over medium heat. Sauté chopped onion until soft, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in diced tomatoes, tomato sauce, barbecue sauce, chicken broth, Worcestershire sauce, vinegar, and brown sugar. Mix well.
- Add shredded chicken and pulled pork. Stir to combine.
- Add corn, lima beans, salt, pepper, and optional hot sauce. Stir well.
- Bring to a gentle boil, then reduce heat and simmer uncovered for 45–60 minutes, stirring occasionally, until thickened.
- Taste and adjust seasonings before serving. Serve hot with cornbread or crackers.
