Description

Brunswick Stew is a Southern classic made with slow-cooked meats, tender vegetables, and a smoky, tangy tomato-based broth. Traditionally featuring chicken and pork, it’s hearty, flavorful, and perfect for feeding a crowd.


Ingredients

  • 2 cups shredded cooked chicken (smoked or rotisserie)
  • 2 cups pulled pork or smoked pork shoulder
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups corn (fresh, frozen, or canned)
  • 2 cups lima beans (or butter beans)
  • 1 can (14 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup barbecue sauce
  • 4 cups chicken broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp apple cider vinegar
  • 1 tbsp brown sugar
  • Salt and black pepper, to taste
  • Hot sauce (optional, to taste)
  • 2 tbsp olive oil or butter


Instructions

  1. Heat olive oil in a large Dutch oven or soup pot over medium heat. Sauté chopped onion until soft, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Stir in diced tomatoes, tomato sauce, barbecue sauce, chicken broth, Worcestershire sauce, vinegar, and brown sugar. Mix well.
  4. Add shredded chicken and pulled pork. Stir to combine.
  5. Add corn, lima beans, salt, pepper, and optional hot sauce. Stir well.
  6. Bring to a gentle boil, then reduce heat and simmer uncovered for 45–60 minutes, stirring occasionally, until thickened.
  7. Taste and adjust seasonings before serving. Serve hot with cornbread or crackers.
