Description

A crowd-pleasing snack that’s golden, chewy, and perfectly buttery. These bite-sized pretzels are ideal for parties, game days, or cozy nights in—ready in about an hour with basic pantry staples.


Ingredients

1½ cups warm (110–115 °F) milk or water

1 Tbsp brown sugar

¼ oz active dry yeast (1 packet)

4½ cups all-purpose flour, plus extra if needed

2 Tbsp melted butter, plus more for brushing

1 tsp fine sea salt

9 cups water

⅓ cup baking soda

1 large egg, whisked with 1 Tbsp water

Pretzel salt or coarse sea salt, for sprinkling


Instructions

  1. In a large bowl, stir together warm milk or water and brown sugar. Sprinkle the yeast over the top and let sit for about 5 minutes until foamy.
  2. Add the flour, melted butter, and salt. Mix until combined.
  3. Knead the dough by hand or with a stand mixer fitted with a dough hook for about 4 minutes, until smooth.
  4. Transfer the dough to a lightly oiled bowl, cover, and let rise for 20–30 minutes or until doubled in size.
  5. Preheat the oven to 450°F and line baking sheets with parchment paper.
  6. Bring 9 cups of water and ⅓ cup of baking soda to a boil in a large pot.
  7. Divide the dough into 12 pieces. Roll each piece into a rope about ¾-inch thick, then cut into 1-inch bite-sized pieces.
  8. Working in batches of about 12 bites at a time, drop the pieces into the boiling water and baking soda mixture. Boil for about 30 seconds, then transfer to the prepared baking sheets.
  9. Brush each pretzel bite with the egg wash and sprinkle with pretzel salt or coarse sea salt.
  10. Bake for 12–14 minutes, or until golden brown.
  11. Optionally, brush the baked bites with extra melted butter.
  12. Serve warm and enjoy!
