Description

Delight in these irresistibly soft and chewy Candy Bar Cookies, filled with mini Snickers bars that melt perfectly inside a rich peanut butter cookie dough. Perfect for parties or whenever you need a sweet treat, these cookies combine the classic flavors of peanut butter and chocolate in every bite.

Ingredients

Cookie Dough

  • 16 tbsp (2 sticks) unsalted butter (room temperature)
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup creamy peanut butter
  • 2 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp kosher salt

Candy Filling

  • 60 mini-size candy bars (Snickers recommended)
  • Sanding sugar, colored or plain, for rolling

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) and prepare baking sheets by lining them with parchment paper.
  2. Cream butter and sugars: In a large mixing bowl using an electric mixer, cream together the room temperature butter, light brown sugar, and granulated sugar until the mixture is light, fluffy, and well blended, about 3-5 minutes.
  3. Add eggs and flavorings: Add the eggs one at a time to the creamed mixture, mixing well after each addition. Then incorporate the creamy peanut butter and vanilla extract, mixing until fully combined.
  4. Combine dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and kosher salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined and no dry streaks remain. Avoid overmixing to keep cookies tender.
  5. Form and fill cookies: Using a ½-ounce cookie scoop or 1 tablespoon measuring spoon, form dough balls. Flatten each slightly and place one mini candy bar in the center. Carefully form the dough around the candy bar, ensuring it is fully encased. Roll each cookie dough ball in sanding sugar to add a sparkling finish.
  6. Bake cookies: Place the encased cookie dough balls on the prepared parchment-lined baking sheets, spacing them evenly. Bake in the preheated oven for 12-15 minutes, or until the cookies have spread, cracked slightly at the edges, but remain soft in the center.
  7. Cool: Allow the cookies to cool on the baking sheet for 5 minutes to firm up, then transfer them to a wire rack to cool completely before serving.

Notes

  • Ensure butter is softened to room temperature before starting for easier creaming and better texture.
  • You can substitute Snickers with other mini candy bars like Milky Way or Twix for different flavor variations.
  • Do not overbake; cookies should look slightly soft and cracked at edges for optimal softness.
  • For an extra touch of crunch, add chopped nuts to the dough if desired.
  • Store cookies in an airtight container at room temperature for up to 5 days.
