Description

Cappuccino Coffee Cookies are the perfect treat for coffee lovers, blending the rich taste of coffee with the sweetness of a traditional cookie. These soft, flavorful cookies offer a comforting taste of cappuccino in a bite-sized form, with espresso, cinnamon, and vanilla enhancing the coffee flavor.

Ingredients

1 cup all-purpose flour

1/2 cup unsweetened cocoa powder

1/2 tsp baking soda

1/4 tsp salt

1 tsp ground cinnamon

1/4 cup butter, softened

1/4 cup granulated sugar

1/4 cup packed brown sugar

1 large egg

1 tbsp espresso powder (or instant coffee)

1 tsp vanilla extract

1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, salt, and cinnamon.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg, espresso powder, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
  6. Stir in the chocolate chips if using.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are firm and the centers are set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
