Ingredients
- 2 cups all-purpose flour
- 1 tsp baking powder

- 2 large eggs
- ½ cup vegetable oil or melted coconut oil
- 2 tsp vanilla extract

- ½ cup raisins or shredded coconut (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
- Whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl.
- In another bowl, beat brown sugar, eggs, oil, and vanilla until well combined.
- Stir in shredded carrots and grated apple.
- Gradually fold the dry mixture into the wet ingredients until just combined.
- Fold in optional mix-ins like nuts or raisins.
- Pour batter into prepared loaf pan and smooth the top.
- Bake 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- Use firm, sweet apples like Honeycrisp, Fuji, or Gala for best flavor.
- Lightly squeeze grated apple if very juicy, but don’t remove all the moisture.
- Do not overmix the batter to avoid a dense loaf.
- This recipe can be doubled to make two loaves.
