Ingredients
- For the Cake:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tsp ground cinnamon
- ½ tsp ground nutmeg

- ¾ cup brown sugar

- For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3–4 cups powdered sugar
- 1 tsp vanilla extract
- A pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch round pans or a 9×13-inch pan.
- Whisk flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a large bowl.
- In another bowl, whisk sugars, eggs, oil, and vanilla until smooth.
- Stir in grated carrots and optional pineapple, nuts, raisins, or coconut.
- Gradually fold dry ingredients into wet mixture until just combined.
- Divide batter evenly between pans and bake 30–35 minutes (round) or 40–45 minutes (9×13), until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then transfer to wire racks to cool completely.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, beating until fluffy.
- Frost cooled cake and decorate as desired.
Notes
- Freshly grated carrots provide the best moisture and texture—avoid pre-shredded carrots.
- Pineapple and raisins add sweetness and moisture but are optional.
- Ensure cakes are completely cooled before frosting to prevent melting.
