Description

Cheesy Broccoli Chicken is a comforting and flavorful dish that combines tender chicken breasts, vibrant broccoli, and a creamy, cheesy sauce. It’s a quick and easy meal that’s perfect for busy weeknights or even a special family dinner.


Ingredients

2 boneless, skinless chicken breasts

2 cups broccoli florets (fresh or frozen)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/2 cup milk

1 tablespoon butter

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil (for cooking the chicken)


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Add the chicken to the skillet and cook for about 5-7 minutes on each side, until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
  3. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt the butter over medium heat. Add the broccoli florets and cook for 3-4 minutes until slightly tender.
  5. Add the cream cheese, milk, and shredded cheddar cheese to the skillet, stirring constantly until the cheese melts and the sauce is smooth and creamy.
  6. Return the chicken breasts to the skillet, placing them on top of the cheesy broccoli sauce. Cover the skillet and cook for an additional 5-7 minutes, allowing the chicken to heat through and soak up some of the cheesy sauce.
  7. Serve the cheesy broccoli chicken immediately, garnished with additional cheese or fresh herbs if desired.

Notes

  1. For different cheeses, try swapping cheddar for mozzarella, gouda, or a blend of your favorites.
  2. For extra flavor, add cooked bacon bits to the cheese sauce or on top of the chicken.
  3. To make it low-carb, use a keto-friendly cheese sauce made from heavy cream and cheddar cheese instead of cream cheese and milk.
  4. Feel free to add other vegetables like spinach, bell peppers, or cauliflower to the dish for added nutrition and flavor.
