Description
Cheesy Broccoli Chicken is a comforting and flavorful dish that combines tender chicken breasts, vibrant broccoli, and a creamy, cheesy sauce. It’s a quick and easy meal that’s perfect for busy weeknights or even a special family dinner.
Ingredients
2 boneless, skinless chicken breasts
2 cups broccoli florets (fresh or frozen)
1 cup shredded cheddar cheese
1/2 cup cream cheese, softened
1/2 cup milk
1 tablespoon butter
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
1 tablespoon olive oil (for cooking the chicken)
Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Add the chicken to the skillet and cook for about 5-7 minutes on each side, until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
- Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the broccoli florets and cook for 3-4 minutes until slightly tender.
- Add the cream cheese, milk, and shredded cheddar cheese to the skillet, stirring constantly until the cheese melts and the sauce is smooth and creamy.
- Return the chicken breasts to the skillet, placing them on top of the cheesy broccoli sauce. Cover the skillet and cook for an additional 5-7 minutes, allowing the chicken to heat through and soak up some of the cheesy sauce.
- Serve the cheesy broccoli chicken immediately, garnished with additional cheese or fresh herbs if desired.
Notes
- For different cheeses, try swapping cheddar for mozzarella, gouda, or a blend of your favorites.
- For extra flavor, add cooked bacon bits to the cheese sauce or on top of the chicken.
- To make it low-carb, use a keto-friendly cheese sauce made from heavy cream and cheddar cheese instead of cream cheese and milk.
- Feel free to add other vegetables like spinach, bell peppers, or cauliflower to the dish for added nutrition and flavor.
- For a spicy version, add crushed red pepper flakes or diced jalapeño to the cheese sauce.
- Store leftovers in an airtight container for up to 3-4 days in the refrigerator.
- Reheat in a microwave-safe dish with a splash of milk or in a skillet over low heat.
