Description

Cheesy Broccoli Rice Casserole is a hearty and comforting dish combining fluffy rice, tender broccoli, and a rich, creamy cheese sauce. It’s the perfect side dish or stand-alone comfort food.

Ingredients

1 cup of rice (uncooked)

2 cups of broccoli florets (steamed)

1 can of cream of mushroom soup (or cream of chicken)

1 cup of shredded cheddar cheese

1/2 cup of sour cream

1/4 cup of melted butter

1/4 cup of milk

1/4 cup of grated Parmesan cheese

1/4 teaspoon of garlic powder

Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the uncooked rice, steamed broccoli florets, and the cream of mushroom soup.
  3. Stir in the shredded cheddar cheese, sour cream, melted butter, milk, garlic powder, and grated Parmesan cheese. Season with salt and pepper to taste.
  4. Transfer the mixture to a greased 9×13-inch casserole dish and spread it evenly.
  5. Cover with foil and bake for 30 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  7. Allow it to cool for a few minutes before serving.

Notes

  1. Different Cheeses: Swap out the cheddar for a blend of Monterey Jack, mozzarella, or Gruyère for a different cheese profile.
  2. Add Protein: Add cooked chicken, turkey, or sausage for a complete one-pan meal.
  3. Spicy Kick: Incorporate a pinch of red pepper flakes or a dash of hot sauce for some added heat.
  4. Gluten-Free: Use gluten-free cream of mushroom or chicken soup and substitute the rice with a cauliflower rice for a low-carb, gluten-free option.
  5. Vegan Option: Use dairy-free cheese, sour cream, and a plant-based soup to make this recipe vegan-friendly.
