Ingredients
Crust
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted butter
Filling
- 2 (8 oz) packages cream cheese, softened
- ¾ cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Topping
- 1 can (21 oz) cherry pie filling
Instructions
- Preheat & Prep: Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan or pie dish thoroughly to ensure easy removal of the cheesecake after baking.
- Make the Crust: In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture firmly into the bottom of the prepared pan to create an even crust layer. Bake the crust for 10 minutes, then set aside to cool completely.
- Make the Filling: In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add eggs one at a time, beating well after each addition to ensure a velvety texture. Finally, stir in the vanilla extract to enhance flavor.
- Bake the Cheesecake: Pour the cream cheese filling evenly over the cooled crust. Bake in the preheated oven for 35-40 minutes, or until the center is slightly set but still has a gentle jiggle when you tap the pan.
- Cool & Chill: Remove the cheesecake from the oven and let it cool on the countertop for 1 hour. Then refrigerate the cheesecake for at least 4 hours or preferably overnight to allow it to set fully and develop its rich flavor.
- Add Cherry Topping & Serve: Just before serving, spread the cherry pie filling evenly on top of the chilled cheesecake. Slice into 10 servings and enjoy this deliciously creamy and fruity dessert.
