Description

This Tomato Bread is a moist and flavorful quick bread featuring fresh cherry tomatoes and a subtle tang from buttermilk. Perfectly topped with crunchy pumpkin seeds, it’s an easy-to-make loaf ideal for a savory snack or a unique accompaniment to meals. Ready in under an hour, this bread combines simple pantry staples with fresh produce for a delightful treat.

Ingredients

Dry Ingredients

  • 3½ cups flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp sugar

Wet Ingredients

  • 1½ cups buttermilk
  • ¼ cup (50 grams) melted butter
  • 1 egg

Add-ins and Garnish

  • 1 cup cherry tomatoes
  • Pumpkin seeds for garnish

Instructions

  1. Preheat the oven: Set your oven to 220°C (440°F) with fan to ensure it reaches the right temperature for baking the bread evenly.
  2. Mix the batter: In a large bowl, combine the flour, baking powder, baking soda, salt, and sugar. Add the buttermilk, melted butter, and egg, then mix well until you create a unified batter without lumps.
  3. Prepare the pan: Grease a loaf pan thoroughly to prevent sticking and help the bread release easily after baking.
  4. Pour the batter: Pour the prepared batter evenly into the greased loaf pan, smoothing out the top slightly.
  5. Add tomatoes and garnish: Gently tuck the whole cherry tomatoes into the batter, spacing them evenly. Sprinkle pumpkin seeds on top to add crunch and a nutty flavor.
  6. Bake: Place the loaf pan in the preheated oven and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean and the top is golden brown.
  7. Cool and serve: Remove the bread from the oven and allow it to cool slightly before slicing. Enjoy a warm slice of this delicious tomato bread.

Notes

  • Cherry tomatoes can be substituted with grape tomatoes if that’s what you have available.
  • Make sure to grease the loaf pan well to avoid the bread sticking when slicing.
  • If you prefer a softer crust, cover the bread loosely with foil during the last 10 minutes of baking.
  • Add herbs like rosemary or thyme for an aromatic twist to the bread.
