Ingredients
1 lb chicken breast, diced
2 tablespoons olive oil
4 cloves garlic, minced
1 cup heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
8 oz pasta (penne, fettuccine, or spaghetti)
Salt and pepper, to taste
1 teaspoon Italian seasoning (optional)
Fresh parsley, chopped (optional, for garnish)
Instructions
- Cook the pasta according to the package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add the diced chicken and season with salt, pepper, and Italian seasoning (if using). Cook until browned and cooked through, about 7-8 minutes. Remove the chicken and set aside.
- In the same skillet, add minced garlic and cook for 1-2 minutes until fragrant.
- Pour in the chicken broth and bring to a simmer. Let it cook for 2 minutes to reduce slightly.
- Add the heavy cream and bring to a simmer again. Stir in Parmesan cheese and cook, stirring occasionally, until the sauce thickens, about 4-5 minutes.
- Return the cooked chicken to the skillet, then toss in the cooked pasta. Stir to coat everything in the creamy sauce and adjust seasoning with salt and pepper if needed.
- Garnish with freshly chopped parsley before serving.
