Ingredients
- 1 lb chicken (breast, thighs, or a mix)
- 1 tbsp butter or olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cloves garlic, minced
- 8 cups chicken broth or stock
- 2 cups egg noodles (or preferred pasta)
- 1/2 tsp dried thyme (or 1 tsp fresh)
- 1 bay leaf (optional)
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (for garnish)
- 1 tbsp lemon juice (optional, for brightness)
Instructions
- Heat butter or oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for about 5 minutes until softened.
- Add garlic and cook for 1 more minute, stirring constantly.
- Pour in the chicken broth. Add chicken, thyme, and bay leaf. Bring to a boil, then reduce to a simmer. Cover and cook for 15–20 minutes until chicken is cooked through.
- Remove chicken from the pot, shred or dice it, then return it to the pot.
- Add noodles and cook until tender, about 6–8 minutes (or per package instructions).
- Season with salt and pepper to taste. Add lemon juice if using.
- Remove bay leaf, garnish with fresh parsley, and serve hot.
Notes
- Use chicken thighs for a richer, more tender result.
- Add extra vegetables like peas, spinach, or mushrooms for variety.
- To avoid mushy noodles in leftovers, cook noodles separately and add them just before serving.
- Bone-in chicken can be used for even more flavorful broth — just remove bones before serving.
- Store without noodles if freezing for best texture upon reheating.
