Ingredients

2 boneless, skinless chicken breasts

3 medium zucchinis, sliced

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1/4 cup fresh parsley, chopped (optional)


Instructions

  • Preheat the oven to 375°F (190°C).

  • Heat olive oil in a large skillet over medium heat. Season the chicken breasts with garlic powder, onion powder, salt, and pepper. Sear chicken on both sides until golden brown, about 4-5 minutes per side. Remove from the skillet and set aside.

  • In the same skillet, add the zucchini slices and cook for 2-3 minutes until just softened. Remove from heat.

  • Slice the cooked chicken into bite-sized pieces.

  • In a baking dish, layer the cooked zucchini and chicken. Sprinkle the mozzarella and Parmesan cheeses over the top.

  • Bake for 20-25 minutes or until cheese is melted and bubbly.

  • Optional: Sprinkle with fresh parsley before serving for extra color and flavor.
