Description

Ingredients

  • 2 cups pumpkin, peeled, seeded, and cubed
  • 1/2 cup white rice (short or medium grain)
  • 6 cups water or light chicken/vegetable broth

  • 2 tbsp rock sugar or regular sugar (optional, for sweet version)


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a large pot, combine the rice, cubed pumpkin, and water or broth.
  3. Bring to a boil over medium-high heat, then reduce to a simmer.
  4. Cook for 45–60 minutes, stirring occasionally, until rice is soft and pumpkin is tender.
  5. Mash the pumpkin into the porridge for a smoother consistency, or leave it chunky as desired.
  6. Add salt for savory flavor or sugar for a sweet version, adjusting to taste.
  7. Serve warm, plain or topped with sesame seeds, green onions, or a drizzle of honey.
