  • 2 large eggs
  • 1 1/2 cups milk
  • 1 cup unsweetened applesauce
  • 1 tsp vanilla extract


Instructions

  1. Preheat the oven and prepare muffin pan: Preheat your oven to 350℉ (175℃). Lightly spray a muffin pan with cooking spray to prevent sticking and set it aside for later use.
  2. Mix ingredients: In a medium bowl, combine the quick oats, eggs, milk, applesauce, granulated sugar, vanilla extract, salt, baking powder, and chocolate chips. Stir well until all ingredients are fully incorporated into a uniform batter.
  3. Fill muffin pan and bake: Evenly divide the batter into the prepared muffin cups. Optionally, sprinkle a few extra chocolate chips on top of each cup. Place the pan in the oven and bake for 28 to 30 minutes, or until the tops turn lightly golden brown and a toothpick inserted in the center comes out clean.
