Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350 degrees Fahrenheit (175°C). Line a 9-inch square baking pan with parchment paper to prevent sticking and set aside.
  2. Make the Cheesecake Filling: In a medium bowl, use an electric mixer on medium speed to beat the softened cream cheese and granulated sugar together until the mixture is thick and smooth. Then reduce to low speed and blend in the egg thoroughly.
  3. Assemble the Bars: Press half of the cookie dough evenly into the bottom of the prepared baking dish to form the crust. Pour the cream cheese filling over the cookie dough and spread it evenly to the edges. Gently tap the pan on the counter to release any trapped air bubbles. Finally, crumble the remaining cookie dough evenly over the cheesecake layer as a topping.
  4. Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until the cookie dough is golden brown and the cheesecake filling is set but still slightly soft to the touch, avoiding any runniness.
  5. Cool and Chill: Remove from the oven and allow the bars to cool in the pan at room temperature for 30 minutes. After cooling, cover the pan with plastic wrap and refrigerate for at least two hours, or preferably overnight, to let the bars fully set.
