Chocolate Chip Cookie Ice Cream Sandwiches are a nostalgic dessert that combines soft, chewy cookies with creamy ice cream—perfect for parties, summer days, or anytime indulgence.
Ingredients
- 2 1/4 cups all-purpose flour
 - 1 teaspoon baking soda
 - 1/2 teaspoon salt
 - 1 cup unsalted butter (softened)
 - 3/4 cup brown sugar
 - 3/4 cup granulated sugar
 - 2 large eggs
 - 2 teaspoons vanilla extract
 - 2 cups semi-sweet chocolate chips
 - 1.5 quarts of your favorite ice cream (vanilla, chocolate, cookies & cream, etc.)
 
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
 - In a separate large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
 - Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
 - Gradually add dry ingredients to the wet ingredients, mixing until just combined. Fold in chocolate chips.
 - Scoop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly.
 - Bake for 10–12 minutes or until golden brown around the edges. Allow cookies to cool completely.
 - Once cooled, pair cookies by size. Soften ice cream slightly, then scoop and spread it onto the flat side of one cookie. Top with a second cookie to form a sandwich.
 - Press gently and smooth the sides. Optionally roll edges in mini chocolate chips or sprinkles.
 - Place sandwiches on a tray and freeze for at least 2 hours before serving.
 
Notes
- Use soft-baked cookies to prevent them from getting too hard in the freezer.
 - Let the ice cream soften for 5–10 minutes for easier assembly.
 - Wrap sandwiches individually to avoid sticking in the freezer.
 - Experiment with different chip varieties like dark chocolate or white chocolate.
 - Add chopped nuts or espresso powder to the dough for a flavor boost.
