Description

Chocolate Chip Cookie Ice Cream Sandwiches are a nostalgic dessert that combines soft, chewy cookies with creamy ice cream—perfect for parties, summer days, or anytime indulgence.


Ingredients

  1. 2 1/4 cups all-purpose flour
  2. 1 teaspoon baking soda
  3. 1/2 teaspoon salt
  4. 1 cup unsalted butter (softened)
  5. 3/4 cup brown sugar
  6. 3/4 cup granulated sugar
  7. 2 large eggs
  8. 2 teaspoons vanilla extract
  9. 2 cups semi-sweet chocolate chips
  10. 1.5 quarts of your favorite ice cream (vanilla, chocolate, cookies & cream, etc.)

Instructions

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

  1. In a bowl, whisk together flour, baking soda, and salt.
  2. In a separate large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  4. Gradually add dry ingredients to the wet ingredients, mixing until just combined. Fold in chocolate chips.
  5. Scoop cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten slightly.
  6. Bake for 10–12 minutes or until golden brown around the edges. Allow cookies to cool completely.
  7. Once cooled, pair cookies by size. Soften ice cream slightly, then scoop and spread it onto the flat side of one cookie. Top with a second cookie to form a sandwich.
  8. Press gently and smooth the sides. Optionally roll edges in mini chocolate chips or sprinkles.
  9. Place sandwiches on a tray and freeze for at least 2 hours before serving.

Notes

  • Use soft-baked cookies to prevent them from getting too hard in the freezer.
  • Let the ice cream soften for 5–10 minutes for easier assembly.
