Description

A warm, gooey Chocolate Chip Skillet Cookie baked in a cast iron skillet, featuring browned butter, rich dark chocolate chunks, and a sprinkle of sea salt. Perfect for sharing straight from the skillet, optionally topped with vanilla ice cream for an indulgent dessert experience.

Ingredients

Skillet Cookie

  • ¾ cup (180g) unsalted butter
  • ¾ cup (135g) light brown sugar
  • ½ cup (100g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (175g) dark chocolate chips and/or chunks
  • 1 pinch sea salt

Optional Topping

  • Vanilla ice cream, for serving

Instructions

  1. Preheat Oven: Preheat your oven to 320°F (160°C) to prepare for baking the skillet cookie evenly.
  2. Brown the Butter: In a 9 or 10-inch cast iron skillet, melt the unsalted butter over medium heat. Stir frequently until it begins to turn a golden brown color, approximately 3 minutes, which adds a nutty flavor to the cookie.
  3. Add Sugars and Vanilla: Whisk in both the light brown sugar and granulated sugar along with the vanilla extract into the browned butter until fully combined.
  4. Cool and Add Eggs: Remove the skillet from heat and let it cool for about 10 minutes to avoid cooking the eggs. Add eggs one at a time, whisking thoroughly after each addition until the mixture is smooth and cohesive.
  5. Add Dry Ingredients: Stir in the all-purpose flour, baking soda, and salt until just incorporated, being careful not to overmix to keep the cookie tender.
  6. Fold in Chocolate: Gently fold in the dark chocolate chips and/or chunks ensuring even distribution throughout the dough.
  7. Spread Dough: Using a spatula, spread the cookie dough evenly in the skillet, pressing lightly to fill the entire surface.
  8. Bake: Bake in the preheated oven for 18 to 20 minutes until the edges are lightly golden brown and the center remains soft and slightly under-baked for a gooey texture.
  9. Finish and Serve: Remove from oven, immediately sprinkle the top with a pinch of sea salt, and serve warm. Optionally, top with a scoop of vanilla ice cream. Slice and enjoy straight from the skillet.

Notes

  • Allow the butter to brown carefully to develop a deep, nutty flavor without burning it.
  • Cool the butter mixture before adding eggs to prevent scrambling.
  • For a chewier texture, slightly underbake the cookie, as described.
  • Vanilla ice cream adds a creamy contrast but can be omitted for a dairy-free option.
  • Use a well-seasoned cast iron skillet for best results and even baking.
