Ingredients

Dry Ingredients

  • 2 1/2 cups old-fashioned rolled oats
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Wet Ingredients

  • 1/3 cup coconut oil, melted
  • 1/3 cup pure maple syrup
  • 1 1/2 teaspoons vanilla extract


Instructions

  1. Preheat and prepare: Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Mix ingredients: In a medium-sized bowl, whisk together the melted coconut oil, cocoa powder, maple syrup, brown sugar, vanilla extract, and salt until fully combined. Add the rolled oats and stir until all the oats are evenly coated with the mixture.
  3. Spread granola: Transfer the granola mixture onto the prepared baking sheet. Use a spatula to spread the granola evenly and press it down firmly to encourage chunkiness.
  4. Bake: Bake in the preheated oven for 10 minutes. Remove and stir the granola to ensure even baking, then bake for an additional 5 to 10 minutes. For chunkier granola, avoid stirring after the first 10 minutes and add a few more minutes to the baking time.
  5. Cool: Remove the granola from the oven and let it cool on the baking sheet for 10 minutes. Sprinkle the semi-sweet chocolate chips on top and any other toppings you prefer. Allow the granola to cool completely for about 45 minutes to let it crisp up before serving or storing.
