Dates and Nuts

  • 24 Medjool dates (about 14 ounces)
  • 24 unsalted roasted almonds
  • 1 tablespoon crushed almonds
  • 1 tablespoon crushed pistachios

Chocolate Coating

  • 1 1/2 cups semi-sweet chocolate chips (about 9 ounces)
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon ground cinnamon


Instructions

  1. Get ready. Line a large sheet tray with parchment paper to prepare for the coated dates. Fill a large pot with a couple of inches of water and bring it to a gentle simmer over medium heat to create a double boiler setup for melting the chocolate.
  2. Stuff the dates. Carefully cut a slit in each date and remove the pit. Press one unsalted roasted almond into each date where the pit was, then close the dates to enclose the almonds securely.
  3. Melt the chocolate. Place a heat-safe bowl on top of the simmering pot so it balances without touching the water. Add the semi-sweet chocolate chips, extra virgin olive oil, and ground cinnamon to the bowl. Stir frequently until the chocolate is fully melted and smooth. Remove the bowl from the heat.
  4. Cover the dates with chocolate. Using a spoon, dip each stuffed date into the melted chocolate, gently rolling to coat it fully. Lift the coated date out of the chocolate and place it carefully on the prepared parchment-lined sheet tray. Repeat until all dates are coated. Then lightly sprinkle the tops with crushed almonds and pistachios.
  5. Chill. Place the tray with the chocolate-covered dates in the freezer for about 1 hour or until the chocolate hardens completely.
  6. Finish and serve. Remove the dates from the freezer and let them sit at room temperature for 10 minutes before serving to soften slightly. Store any leftovers in an airtight container in the refrigerator for up to 1 week.
