Ingredients
Pineapple
- 1 ripe pineapple
Chocolate Coating
- 10 ounces dark or semi-sweet melting chocolate
Toppings
- Toasted shredded coconut, for garnish
- Mini chocolate chips, for garnish
- Flaked sea salt, for garnish
Instructions
- Prepare the pineapple: Hollow out your pineapple carefully and trim off the skin to get rid of the rough outer layer.
- Cut the pineapple: Slice the pineapple into ½ inch wide strips, then further cut these strips into triangles approximately 2 inches high, or to your preferred size.
- Skewer the pineapple: Thread the pineapple triangles onto skewers, ensuring the pointed end is facing upwards, then set them aside on a plate or tray.
- Melt the chocolate: Place the chocolate in a glass bowl and melt it in the microwave in 30 second intervals. Stir thoroughly between increments to utilize residual heat and achieve a smooth, silky texture. Avoid overheating to prevent the chocolate from seizing.
- Dip the pineapple: Dip each pineapple skewer halfway into the melted chocolate so that part of the fruit remains visible for contrast.
- Add toppings: While the chocolate is still wet, sprinkle toasted shredded coconut, mini chocolate chips, and a pinch of flaked sea salt over the chocolate area to add texture and extra flavor.
- Set the chocolate: Allow the chocolate to set fully at room temperature or in the refrigerator until firm.
- Optional decoration: For a decorative touch, leave a few skewers without toppings and once their chocolate coating has set, drizzle additional melted chocolate over them in a visually pleasing pattern.
Notes
- Use ripe pineapple for the best natural sweetness and aroma.
- When melting chocolate, stirring well between intervals prevents burning and ensures smoothness.
- Adjust topping quantity and combinations based on taste preferences.
- Toasting the shredded coconut enhances its nutty flavor—toast lightly in a dry skillet until golden brown.
- Store any leftovers refrigerated and consume within 2 days for optimal freshness.
- The recipe can easily be doubled or adjusted for larger gatherings.
