Description

Enjoy a tropical treat with these Chocolate Covered Pineapple skewers. Fresh pineapple pieces are dipped in melted dark or semi-sweet chocolate and garnished with toasted shredded coconut, mini chocolate chips, and flaked sea salt for an irresistible combination of sweet, tangy, and salty flavors. Perfect for parties or a refreshing dessert.

Ingredients

Pineapple

  • 1 ripe pineapple

Chocolate Coating

  • 10 ounces dark or semi-sweet melting chocolate

Toppings

  • Toasted shredded coconut, for garnish
  • Mini chocolate chips, for garnish
  • Flaked sea salt, for garnish

Instructions

  1. Prepare the pineapple: Hollow out your pineapple carefully and trim off the skin to get rid of the rough outer layer.
  2. Cut the pineapple: Slice the pineapple into ½ inch wide strips, then further cut these strips into triangles approximately 2 inches high, or to your preferred size.
  3. Skewer the pineapple: Thread the pineapple triangles onto skewers, ensuring the pointed end is facing upwards, then set them aside on a plate or tray.
  4. Melt the chocolate: Place the chocolate in a glass bowl and melt it in the microwave in 30 second intervals. Stir thoroughly between increments to utilize residual heat and achieve a smooth, silky texture. Avoid overheating to prevent the chocolate from seizing.
  5. Dip the pineapple: Dip each pineapple skewer halfway into the melted chocolate so that part of the fruit remains visible for contrast.
  6. Add toppings: While the chocolate is still wet, sprinkle toasted shredded coconut, mini chocolate chips, and a pinch of flaked sea salt over the chocolate area to add texture and extra flavor.
  7. Set the chocolate: Allow the chocolate to set fully at room temperature or in the refrigerator until firm.
  8. Optional decoration: For a decorative touch, leave a few skewers without toppings and once their chocolate coating has set, drizzle additional melted chocolate over them in a visually pleasing pattern.

Notes

  • Use ripe pineapple for the best natural sweetness and aroma.
  • When melting chocolate, stirring well between intervals prevents burning and ensures smoothness.
  • Adjust topping quantity and combinations based on taste preferences.
  • Toasting the shredded coconut enhances its nutty flavor—toast lightly in a dry skillet until golden brown.
  • Store any leftovers refrigerated and consume within 2 days for optimal freshness.
  • The recipe can easily be doubled or adjusted for larger gatherings.
