Ingredients

Ganache

Coating

  • 10 ounces dark chocolate chips (second package)
  • ¼ ounce crushed freeze-dried strawberries (reserved for topping)


Instructions

  1. Heat Cream: In a small saucepan over medium heat, warm the heavy cream until it just begins to simmer, then promptly remove it from the heat to prevent boiling.
  2. Make Ganache Base: Place one package (10 ounces) of dark chocolate chips in a heat-safe bowl. Pour the hot cream over the chocolate and allow it to sit undisturbed for five minutes to melt the chocolate thoroughly.
  3. Mix Strawberries into Ganache: Stir the chocolate and cream mixture gently until smooth and well combined. Fold in all but one tablespoon of the crushed freeze-dried strawberries to infuse the ganache with strawberry flavor.
  4. Chill Ganache: Transfer the ganache to the refrigerator and chill for at least one hour until firm enough to scoop.
  5. Melt Coating Chocolate: Heat the remaining chocolate chips in the microwave in 30-second intervals, stirring after each, until completely melted and smooth.
  6. Form Truffles: Using a tablespoon or cookie scoop, portion the chilled ganache into balls. Dip each ball into the melted chocolate coating, ensuring full coverage, then place on parchment paper.
