Instructions

  1. Slice and Crumble Banana Bread: Using a bread knife, carefully slice off the crust from the banana bread to avoid tough bits, then crumble the remaining soft bread into very small pieces in a medium mixing bowl using your fingers or a fork.
  2. Combine with Cream Cheese: Add the softened cream cheese to the crumbled banana bread, then mash together thoroughly with a fork until the mixture is creamy and uniform in texture.
  3. Form Truffle Balls: Using your hands, roll the mixture into evenly sized balls about 1-2 inches in diameter. This should yield approximately 50 truffles, but feel free to adjust the size to your preference.
  4. Chill the Truffles: Place the formed truffle balls on a baking sheet lined with wax paper and refrigerate for at least 30 minutes or up to overnight to firm up.
  5. Melt the Chocolate: Melt the chopped chocolate in the microwave or a double boiler, stirring every 10-20 seconds to ensure even melting without burning.
  6. Dip the Truffles: Working in small batches, dip the chilled banana bread balls into the melted chocolate, then gently transfer between two forks to let excess chocolate drip back into the bowl.
