Ingredients
1 cup butter, softened
1 cup granulated sugar
1 large egg
1 tsp vanilla extract
2 cups all-purpose flour
1/2 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1 cup mini marshmallows
1/2 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or a silicone baking mat.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing just until combined.
- Gently fold in the mini marshmallows and chocolate chips until evenly distributed.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place the dough balls on the prepared baking sheets, leaving space between each one.
- Bake for 8-10 minutes, or until the cookies are set and slightly firm around the edges. The marshmallows should be soft and slightly melted.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
