Ingredients

Cake

  • 250 g Butter, softened (or baking spread)
  • 250 g Caster sugar
  • 1 Teaspoon Orange extract
  • 1/2 Teaspoon Vanilla extract
  • 4 Medium Eggs
  • 210 g Self-raising flour
  • 40 g Cocoa powder
  • 3 Tablespoons Milk
  • Zest of 1 Medium orange

Topping

  • 100 g Terry’s Chocolate Orange (divided: 100 g melted for icing plus 16 segments for decoration)
  • 100 g Butter, softened
  • 100 g Icing sugar
  • 10 g Cocoa powder
  • 1-2 Tablespoons Milk
  • Handful Orange sprinkles and/or fresh orange zest


Instructions

  1. Preheat: Preheat your oven to 180°C (160°C fan) and line an 8×10-inch baking tin with baking paper to prevent sticking.
  2. Cream: In a large bowl, cream together the softened butter and caster sugar until light and fluffy. Stir in the orange extract and vanilla extract to infuse the flavors.
  3. Mix Batter: Gradually add the eggs, self-raising flour, cocoa powder, and milk a little at a time into the creamed mixture. Stir gently until you have a smooth, thick batter. Fold in the orange zest to add fresh citrus aroma.
  4. Bake: Spread the batter evenly into the prepared tin. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Cool: Allow the cake to cool in the tin for 10 minutes, then carefully invert it onto a wire rack to cool completely before frosting.
  6. Melt Chocolate: Melt 100 g of Terry’s Chocolate Orange and allow it to cool completely to room temperature, ensuring it’s ready to be mixed into the icing.
  7. Prepare Icing: In a medium bowl, beat together the softened butter, icing sugar, and cocoa powder until smooth. Add milk gradually to loosen the mixture to a spreadable consistency. Stir in the cooled melted chocolate thoroughly.
  8. Decorate: Spread the chocolate orange icing evenly over the cooled cake. Arrange the Terry’s Chocolate Orange segments on top and sprinkle with orange sprinkles and/or fresh orange zest for an attractive finish.
  9. Serve: Slice the cake into 16 pieces and enjoy this decadent chocolate-orange delight.
