Description

Delicious and easy-to-make Chocolate Peanut Butter Banana Bites are perfect for a healthy snack or dessert. These bite-sized frozen treats combine ripe bananas, creamy peanut butter, and rich dark chocolate, offering a delightful mix of flavors and textures. Ideal for a quick, satisfying indulgence that is naturally sweetened and can be stored in the freezer for up to two months.

Ingredients

Banana Bites

  • 3 ripe bananas
  • 1/3 cup natural peanut butter

Chocolate Coating

  • 1/2 cup dark chocolate chips
  • 2 teaspoons coconut oil

Instructions

  1. Prepare Bananas: Peel and slice the bananas into rounds about 1/4 inch thick to create the base of the bites.
  2. Assemble Bites: Line a platter or small baking sheet with parchment paper. Place about 1/2 teaspoon of natural peanut butter on a banana slice, then top with another banana slice to form a sandwich. Repeat until all banana slices are used, making approximately 30 bites. Place the assembled bites on the parchment-lined platters and freeze for about 1 hour to harden.
  3. Melt Chocolate: In a microwave-safe bowl, combine dark chocolate chips and coconut oil. Microwave the mixture for 1 minute, stir, then continue microwaving in 30-second increments until fully melted, usually within 2 minutes total.
  4. Dip Banana Bites: Remove one platter of the frozen banana bites from the freezer. Dip each bite halfway into the melted chocolate to coat; full coating is optional but requires more chocolate. Return the chocolate-coated bites to the parchment-lined platter.
  5. Freeze Again: Place the platter back in the freezer to let the chocolate harden, about 15 minutes. Repeat the dipping process with the second platter of bites.
  6. Store or Serve: Once set, enjoy the banana bites immediately or transfer them to a freezer-safe container. They can be stored in the freezer for 1-2 months.
  7. Thaw Before Eating: When ready to eat, remove bites from freezer and let them thaw for approximately 5 minutes to soften for the best texture.

Notes

  • Use ripe bananas for natural sweetness and best texture.
  • Natural peanut butter without added sugar or oils enhances the flavor and keeps it healthier.
  • If you want fully chocolate-covered bites, use more chocolate chips accordingly.
  • Store bites in a single layer in the freezer to prevent sticking.
  • Allow bites to thaw slightly before eating for optimal taste and texture.
