- Melt the chocolate: Finely chop the dark chocolate. Place two-thirds of the chocolate into a microwave-safe plastic bowl and microwave in 30-second intervals, stirring thoroughly between each, until fully melted.
- Temper the chocolate: Add the remaining third of the chopped chocolate to the melted chocolate and stir vigorously until smooth. If any small lumps remain, remove them to ensure a silky texture.
- Combine quinoa and chocolate: Pour the toasted quinoa into the melted chocolate along with the sea salt. Mix thoroughly until the quinoa is completely coated with chocolate.
- Form the crisps: Using a teaspoon, scoop dollops of the chocolate-quinoa mixture onto a parchment-lined baking sheet. Flatten each dollop into a thin disk using the back of the spoon.
- Set the crisps: Chill the baking sheet in the refrigerator for about 30 minutes, or until the crisps are fully set and firm.
