Ingredients

Truffle Mixture

  • 1 1/2 cups dark chocolate chips, divided
  • 3/4 cup chopped fresh strawberries

Instructions

  1. Cook Strawberries: Add the chopped strawberries to a pot on the stove over low-medium heat. Cook for 2-3 minutes while mashing constantly with a metal potato masher to break down the fruit and release juices.
  2. Melt Chocolate with Strawberries: Turn off the heat and immediately add 3/4 cup of dark chocolate chips to the mashed strawberries. Stir thoroughly until the residual heat melts the chocolate and the mixture becomes smooth and well combined.
  3. Chill Mixture: Transfer the chocolate-strawberry mixture to a bowl and place it in the fridge for 30 minutes to firm up.
  4. Prepare for Rolling: Once chilled, stir the mixture well and let it sit at room temperature for 5 minutes to soften slightly for easier handling.
  5. Form Truffle Balls: Using a tablespoon, scoop portions of the mixture and roll them into balls using your hands (gloves optional). Place each ball on a parchment-lined plate. Repeat until all mixture forms about 12 balls.
  6. Melt Remaining Chocolate: Melt the remaining 3/4 cup of dark chocolate chips either in a microwave-safe bowl in 20-second high-power intervals, stirring between each, or in a clean pot on the stove over low heat, stirring constantly without using the previous pot.
  7. Coat Truffles: Drop each strawberry ball into the melted chocolate. Use two forks to fully coat and lift the ball out, then place on a parchment-lined plate.
  8. Add Topping: Sprinkle each coated truffle with freeze-dried strawberry powder if desired for a decorative, flavorful touch.
