Ingredients
1 cup water
2 tablespoons butter
1 tablespoon sugar
1/2 teaspoon salt
1 cup all-purpose flour
2 large eggs
1/2 teaspoon vanilla extract
1/2 cup sugar (for coating)
1 tablespoon ground cinnamon

Instructions

In a medium saucepan, bring water, butter, sugar, and salt to a boil over medium heat. Stir to melt the butter.

Once boiling, add the flour and stir constantly until a dough forms and pulls away from the sides of the pan, about 1-2 minutes.

Remove from heat and let the dough cool for 5 minutes.

Beat in the eggs one at a time, making sure each is fully incorporated. The dough should be smooth and slightly sticky.

Stir in the vanilla extract.

Heat oil in a deep fryer or large pot to 350°F (175°C).

Combine sugar and cinnamon in a shallow dish.
